下処理後にザルにあげて置くことで、すじこに含まれた水分が切れ、味が染み込みやすくなります。 すじこにはアニサキスが寄生している恐れがある為、70℃のお湯で下処理を行っています。

 

By placing the fish roe in a colander after preliminary processing, the moisture contained in the roe is drained, making it easier for flavors to penetrate. Since there is a risk of anisakis parasites in the roe, the preliminary processing is done using water heated to 70°C.
